The one thing about working with a group of co-workers in a more rural area of Virginia is that we tend to think of each other as a second family; and where there is family there is good food.  One of the companies where I was once employed encouraged co-workers to fellowship to develop stronger teamwork skills.  My unit

often hosted pot-luck lunches for birthdays, holidays, baby showers, retirements, etc. and we all enjoyed each other’s dishes so much that we organized a cookbook for the company.

Sausage & Rice Casserole was a recipe given to me by Cindy Rice.   I can still hear Cindy tell her customers that her name wasn’t, “Cindy Price,” but “Cindy Rice, like Rice A Roni the San Francisco treat!” Isn’t it amazing how recipes of good food create fond memories?!  Cindy Rice’s recipe makes a delicious casserole that my family loves, and it offers the opportunity to use some fresh garden vegetables such as onion, green pepper, and celery.  I hope your family will enjoy it too.

Sausage & Rice Casserole

(Preheat Oven 350 degrees)

Ingredients:

1 pound spicy sausage (I use Jimmy Dean brand – if you don’t care for spicy foods, try the mild sausage; or if you like it spicier, add tobasco.)

1 can Cream of Chicken Soup

1 cup chopped celery

½ cup chopped green pepper

½ cup chopped onion

1 cup cooked rice

hamburger.) Drain off grease.  Cook celery, green pepper, and onion in skillet with sausage until tender. You may add a tablespoon of water to steam vegetables with sausage.  Stir in soup and cooked rice.  Cook over low heat 5 minutes.  Pour into 8×8 baking dish.  Arrange olives on top if desired.  Cover with aluminum foil and bake 25 minutes.  Uncover and bake an additional 15 minutes.  Serves 4.

Note:  This dish freezes well and it’s easy to make a double batch; one for your family and one to share!
