Recipe Time: Old Fashioned Pudding Cake

Cast Iron SkilletWhen we were growing up one of my sister’s favorite cakes was one that my grandmother made in a 12” cast iron skillet.  It was the skillet that she cooked almost everything in – breakfast, lunch, and dinner.  Well seasoned, the pan was burnt and dirty looking to me, but oh my, the delicious food it contained over the years.  Unfortunately, I don’t own a large cast iron skillet, but I do enjoy putting together this old, traditional recipe for my sister’s birthday.  I’m not sure how long my grandmother had this recipe, but it has been in the family well over 50 years.

Old Fashioned Pudding Cake

Preheat oven to 325 degrees

Cake Ingredients:

  • 1 ½ cup sugar
  • 2 cups self-rising flour (or 3 cups all-purpose flour, 2 teaspoons baking

    powder and 1 teaspoon baking soda. You will need to increase the milk by ½ cup.)

  • 1 cup milk
  • 2 eggs
  • 2/3 cup cooking oil (Instead of oil, you may try ½ cup softened butter)
  • 1 teaspoon vanilla flavoring

Directions:

Mix all ingredients well.  Pour into greased bundt pan and bake for 50 minutes at 325 degrees.  (Today, I baked the cake in a rectangular 9×13 pan and baked it for 40 minutes.)

Chocolate Sauce Ingredients:

(I usually make a double batch of sauce because my sister and I are choc-a-holics!)

Bring chocolate sauce to a gentle boil.

  • 1 cup sugar
  • 3 tablespoons cocoa
  • ¼ teaspoon salt
  • 1 tablespoon butter
  • ½ cup water
  • ½ teaspoon vanilla

Directions:

Mix all ingredients in a saucepan.  Simmer over medium heat until slightly boiling.  Drizzle warm sauce over slice of cake.  Enjoy!
