Thanksgiving Greetings from Down in the Hollow. Today I am featuring Ed Eggleton from Bassett, Virginia. Ed is well known as the Shumate Family chef. He is often bringing delicious new recipes for the family to try and I have to admit, I can’t recall anything I did not like. I am thankful that Ed is joining my blog today and I hope you, my reader, enjoy his recipe for Oreo Cheesecake Cupcakes with Chocolate Ganache.
OREO Cheesecake Cupcakes with Chocolate Ganache
20 OREO Cookies (12 whole in bottom of cupcakes and 8 chopped coarsely for filling)
¾ cup powdered sugar
1 lb cream cheese (2 ea 8 oz packages), softened
2 egg whites
Pinch of salt
¼ cup heavy cream
¼ cup chocolate chips (semi-sweet)
Preheat oven to 300° F. Line standard muffin tin with paper or foil liners and place 1 OREO cookie in bottom of each liner.
Beat cream cheese and sugar until smooth.
Add eggs, one at a time and mix until combined using medium speed but do not over mix.
Add pinch of salt and mix.
Fold in coarsely chopped OREOs.
Fill each cup with mixture almost to the top.
Bake for about 25 minutes (until the centers appear set and a toothpick inserted in the center comes out clean). Cool.
To make chocolate ganache, melt the chocolate and stir in the heavy cream until combined completely.
With a spoon, spread the ganache over the cupcakes and let them cool completely before storing in fridge.
These cupcakes can be decorated to suit any occasion.
I personally am hoping that Ed is bringing these to the Shumate Clan’s Thanksgiving dinner…Please Ed?????!!!!
