With all the strawberry festivals going on in the month of May I thought I would share a quick, easy, and tasty strawberry pie recipe that is a BIG hit when made with red, ripe, garden fresh strawberries.
Ingredients for one pie:
1 baked deep dish pie shell
1 8oz cream cheese, softened
1 cup powdered sugar
1 cup whipped topping
1 pint strawberry slices
Mix cream cheese, powdered sugar and whipped topping together until smooth. Fold in strawberries. Pour into cooled, baked pie shell and let set in the refrigerator for at least 1 hour. Top cooled pie with fresh strawberries and fresh mint leaves.
Note: I double the recipe because one pie never seems to be enough. I also let my pie set in the refrigerator overnight. I’m not a great pie decorator, but this didn’t stop folks from eating it! I hope you’ll enjoy this delicious recipe too!
